A subterranean space for sweets opens September 7th below Patisserie Chanson in the Flatiron. Executive chef Rory Macdonald created a musically-themed menu of sweet and savory courses—chanson means song in French—that hits notes like spicy, sweet, salty and sour.
The $68 tasting menu starts with truffled popcorn before moving right into spicy and sweet territory with a composed apple and jalapeno dish. Presentations run simple to dramatic, with flourishes like smoke and colorful liquids poured table-side. Savory elements like peanut butter and black truffle punctuate various courses.
In the construction of the bar a secret room was discovered, allegedly the site of a former speakeasy. Fittingly, a $52 drink pairing can be added to the dessert experience, including an opening glass of prosecco, a gin and tonic paired with pancetta, and cocktails to conclude.
