Here's Prospect, an ambitious little neighborhood restaurant and bar with a talented kitchen team, opening in Fort Greene Friday serving "Modern New-American" fare. They had a press preview party last night, and we walked away impressed by what Executive Chef Kyle McClelland was cranking out of the restaurant's cozy open kitchen. Highlights include a slamming Sweet Corn Chowder, the perfectly seared Ahi Tuna Flatbread, and the Smoked Hamachi with Musk Melon, Yuzu, Trout Roe, Hearts of Palm, and Micro Basil. The menu might be a little ambitious for Fulton Street, but at least Prospect isn't pretentious.

The joint's atmosphere is modest and casual, with photography from local artists lining the exposed brick walls, a marble-topped bar with plenty of elbow room, and reclaimed wood from the Coney Island boardwalk framing the open kitchen, where customers can sit and watch McClelland and Chef de Cuisine Vinson Petrillo go to work. They'll also be offering a five course tasting menu ($80) which McClelland says will be largely improvised based on the diner's dietary preferences.

On the regular dinner menu, appetizers range from $10 to $18, entrees from $19 to $29. It goes without saying that almost all the ingredients are locally-sourced, with much of the produce coming from the rooftop Brooklyn Grange. The bar serves a range of specialty cocktails such as The Argyle, made with Vodka, St. Germain, Lemon, and garnished with a big beautiful blackberry. Free truffle popcorn is also promised at the bar, which serves a separate menu (below) and stays open until 2 a.m., partly in hopes of luring folks from the not-too-far away Barclays Center.
