National Watermelon Day is coming up on August 3rd, and there's no better way to enjoy the summer treat than with some alcohol. Just like when you were a kid.
From the people of Congress Hall in Cape May, NJ—here's a recipe for WATERMELON MARGARITA ADULT POPSICLE (pictured) they serve up.
- 5 cups chopped seedless watermelon
- 2 tablespoons fresh lime juice
- 3 tablespoons granulated sugar
- 1/4 cups water
- 1/4 cup silver tequila
- 8 ice pop moulds
Purée all ingredients in a blender until smooth. Pass through a fine mesh strainer, pressing on any solids to extract all liquid. Skim off any foam and pour into the moulds. Place in freezer for 30 minutes to firm up. Insert popsicle stick and freeze until firm, about 24 hours. Serves 8.
Make a WATERMELON KEG! Forget about just soaking your watermelon slices in vodka, and make a pretty watermelon keg. According to Watermelon.org (!), all you need is a watermelon, a knife, a spoon, a spigot, and some common sense. You can choose whatever alcohol mixture you want to put inside—the Food Network suggests Sparkling rosé, gin and Alizé Red Passion, or any other fruit-flavored liqueur.

This features fresh watermelon, Campari, Bombay Sapphire and pink peppercorn.
