If you missed attending Monday's Gothamist-Slice Pizza Party at Fornino, you missed a great event as well as a mozzarella making demonstration. Lucky for all of us, there's video of the demo by chef/owner Michael Ayoub thanks to Slice and Matty. Essentially, you take milk curds, have them sliced up, pour water onto them, and then make the resulting mass of cheese nice and smooth, but we're over simplifying. The process in the video is much more clear.


And after you've gone and made your mozzarella, you can cut it up in little tasty pieces and even wrap them in prosciutto for a really tasty snack (no matter how full you are).
