The Roberta's pizza game is legend by now but exquisite pies aren't the only things coming out of the ovens there. In fact, Roberta's and its tasting menu sister Blanca offer an exceptional bread and pastry program as well, from intriguing baguettes to croissant to biscotti. These are especially prevalent at the restaurant's takeout and delivery satellite operation, which opens in the early AM to service straphangers and the like with bagels, bialys and other early-morning treats.

For its DIY attitude and laid back atmosphere, the baking program here is quite regimented. The bakery team—led by head baker Nina Subhas—works daily from 4 a.m. until 2 p.m. seven days a week, with perhaps a day off here or there, an important reminder that the "glamor" of a chef's life consists mostly of an exhausting schedule. During that time, they're working non-stop on a dozen different baked goods that'll be parsed out to the two restaurants or sold at a retail level at the bakery.
