Vegans clamoring for more veggie burgers can head over to the West Village to get their fix with the debut of by Chloe today on Bleecker Street. The new plant-based cafe and to-go operation—a collaboration between chef Chloe Coscarelli and ESquared Hospitality (most notably of the BLT empire)—boasts an all-vegan menu of both healthy-sounding and comfort classic dishes, from Kale Caesar salads to multiple types of veggie burgers, as well as drinks, smoothies, ice creams and baked goods.

Those opting for greens-based meals can look to the Detox Kale Salad ($9.95) with grape tomatoes, toasted sunflower seeds, capers, almond parm and caesar dressing or one of the eatery's cold-pressed juices. Those of us in the opposite mindset can opt for the Guac Burger ($9.95), with a patty made from black beans, quinoa and sweet potatoes, then topped with corn salsa, onion, tortilla strips, chipotle aioli and, of course, guacamole.

The new spot models itself similarly to the Blossom empire, who do comfort-type foods with seitan and the like, while also offering salads and grab-and-go items. Gourmet fast casual is becoming the de rigueur new business model for restaurateurs looking to diversify their portfolio. Tapping into the large vegan base could be the next big cash cow (soy?) (soyrry) in that department.
