Saul Bolton, Chef

Ten years ago Saul Bolton and his wife Lisa opened Saul on Smith Street in Brooklyn’s Boerum Hill. At the time, the location probably seemed a little too remote for fine dining, but the restaurant has since become a favorite of locals, epicureans from other boroughs, and—since becoming one of only three restaurants in Brooklyn to receive a precious Michelin star—a destination for European tourists. Bolton spent his early years in the kitchens of David Bouley and Eric Ripert, and the meticulousness of his seasonal menu reflects those experiences.

If you follow along with this sort of thing, you'll know how earth shattering it is that outgoing Times dining critic Frank Bruni has bestowed three out of four precious stars on Keith McNally's casual-yet-elitist reboot of Minetta Tavern. That's a lot of stars for a place like this, especially considering Bruni's past ambivalence to the restaurateur, who famously accused Bruni of sexism after the critic gave his restaurant Morandi (which had a female chef) a tough review. Anyway, Bruni hearts McNally's Minetta, which he declares "the best steakhouse in the city." Meanwhile, the Post's Steve Cuozzo has some thoughts on Bruni's depature. (The take away's basically, Who cares, the Times is now a paper tiger.)

Seäsonal: This sleek new midtown restaurant (pictured) uses Austrian and German classics as a springboard into lighter iterations of typically heavy Kraut cuisine. Chefs and co-owners Wolfgang Ban and Eduard Frauneder—if those even are their real names—are intent on making traditional staples like Schweinsbauch (Crispy Pork Belly) new again with fresh, locally-sourced ingredients. Other items include Wiener Schnitzel (Breaded Veal cutlet) served with a potato and cucumber salad, and Monkfish Medallions served on Szegediner Kraut. The wine list emphasizes regional bottles such as Riesling, Rivaner, and Spätburgunder (Pinot Noir), and the atmosphere is comfy and clean; Thrillist likens the white curves and latticework to "the getaway nook on the cruise ship from The Fifth Element." 132 West 58th Street, (212) 957-5550
