Momofuku's New Bar Booker And Dax Runs Very Hot And Cold

The haute cocktails keep coming to the East Village. Enter the latest: the Momofuku crew's new cocktail lounge behind Ssäm Bar, Booker and Dax. The whole thing is very science-y and should very much appeal to the WD-50 set. Liquid nitrogen-cooled glasses anyone?

Booker and Dax lives in the original Milk Bar space behind Ssäm Bar and the room itself isn't all that changed. But the fare is not the same at all. Instead of crack pie and cereal milk there are now boozy drinks like the "Lady of the Night," made with clarified tomato juice, house-distilled horseradish, sriracha, Worcesteshire sauce and reposado tequila in a nitrogen-cooled glass. Oh, you prefer your drinks hot? Well Dave Arnold, the French Culinary Institute director of culinary technology also has drinks that—taking a safer page from Albert Trummer—are lit up using the bar's built-in 1,500° heater (created by Arnold himself). In addition to all the fancy drinks the spot, named after Arnold's two sons, will also have a basic bites menu that includes the signature Momo pork buns and, soon they say, french fries.

    But seriously, yes the phonebooth thing is gimmicky and it can attract an insufferable pretentious crowd, but hands down the drinks at PDT are the most thoughtfully prepared and delicious in town. Jim Meehan is my favorite bartender in terms of skill and originality (and let's just say I got to A LOT of craft bars). In the few times I met him, he was genuinely passionate about everything he was serving, and wanted to explain all the nerdy intricacies. 

    You should browse his fascinating book or just try a few drinks before you start speaking ill of such a fun place (Plus the 'exclusive secret phonebooth' deal is actually just a trick to avoid paying for a second liquor license).

     What's with the ill-will? Have trouble getting in? Like any fancy restaurant, if you call for reservations well enough ahead, it's never an issue.
