On Wednesday night Nueske’s, the beloved smoked meats purveyor, will be taking over Bark Hot Dogs in Park Slope for a five-course tasting menu paired with various Sixpoint beers, including a new beer that hasn't been released yet, the Mad Scientist #7. Bark says they'll be incorporating products from the Wisconsin-based smokehouse for each course, and Vera Obias, the pastry chef at Buddakan, will round out the meal by making a special bacon-infused dessert: Almond Brioche Bread Pudding with Smoked Bacon Maple Sauce & Vanilla Rum Ice Cream.

Leading up to that, guests will begin their smokey feast with Smoked Duck Croquettes, with Pickled Hot Peppers and a Sixpoint Smoked IPA. This will be followed by a Bacon Cheddar Dog with Smokey Bacon, Grafton Cheddar Sauce, and Pickled Red Onions, paired with Sixpoint Bark Red Ale. Then there's the Smoked & Braised Pork Shoulder with Crispy Egg, White Corn Grits, Dried Sweet Corn, & Grafton Cheddar, paired with the Sixpoint Mad Scientist #7. And a Choucroute Garni: Hawthorne Valley Sauerkraut Braised with Apples, Bacon, Bratwurst & Weisswurst, served with Young Potatoes & Grainy Mustard and paired with Sixpoint Crisp Pilsner. Man, we're hungry.

The dinner, which costs $40, will have two seatings, and while the 8:30 p.m. one is sold out, there are still tickets available for the 6 p.m. And smoked meat obsessives will be pleased to know that a representative from Nueske’s will be on hand to answer all your questions.
