Chef Proudly Admits Lying To Gluten-Free Customers

033111glutenguy.jpg Tavern on the Green was always known more for its glitzy ambiance than for the quality of its food, so it's not particularly surprising to learn that a chef there may have been up to some shady shenanigans. Former executive banquet chef Damian Cardone is taking heat today for a Facebook confession regarding his habit of screwing customers who requested gluten-free pasta. Cardone, you see, is a gluten-allergy denier, and according to this Facebook post, he seemed to enjoy disregarding their requests:

Gluten free is bullshit!! Flour and bread have been a staple of life for thousands, THOUSANDS of years. People who claim to be gluten intolerent [sic] dont [sic] realize that its [sic] all in there [sic] disturbed little heads. People ask me for gluten free pasta in my restaurant all the time, I tell em sure, Then I serve serve em our pasta, Which I make from scratch with high gluten flour. And you know what? nothing, NOTHING! ever happens! People leave talking about how good they feel gluten free and guess what, They just had a full dose! Idiots!

Eat gluten and die, people with allergies! The Facebook post was discovered by Foodista, which notes that the Facebook page has since been taken down. Earlier this month, Dr. Alessio Fasano at the University of Maryland's Center for Celiac Research published a paper proving that gluten sensitivity exists. "People with celiac disease and gluten sensitivity experience near-identical symptoms, including diarrhea, bloating, abdominal pain, joint pain, depression, brain fog and migraines," Dr. Fasano explains.

And a Foodista commenter writes, "As a recently diagnosed 'gluten free' eater, I can say that the reaction takes about 2 - 4 hours for me, and if someone told me I was getting gluten free I would assume it was another ingredient I inadvertently ate elsewhere than the 'gluten free' dish. People mistake the allergy for something like an anaphalactic shock sort of allergy, when instead it’s like lactose intolerance, digestive upset. If he’s that upset about the ‘gluten free’ dining, he should just make it clear he doesn’t cater to such diners and they can easily choose to eat elsewhere."

Some chefs are in fact electing to do just that; earlier this month the Times reported that a growing number of "purist" chefs are pushing back against what they see as excessive customer fussiness. Celebrity chef David Chang says he thinks "The special requests are ridiculous. My personal opinion is that a lot of people say they have a special allergy or they don’t like something so they can get better service." [Via Zagat Buzz]

  • I hope people realize that 99% of restaurants lie about "gluten" free food.  We also lie about dairy not being in things for all the lactose intolerant.

    Its just a fact of doing business.  If you eat out you WILL eat gluten and dairy products.  We are told to lie. We have meetings on creative ways of getting around replying. Its fact. We ignore allergies.

    And you know what happens? Nothing.

    I am gluten intolerant, and am severely sensitive. I eat out all the time, and order take out. I am always kind to those I deal with. I remember that no one is more familiar with my allergy than me and my doctors. And I make sure that I am as informed as possible about the place where I will be eating. A meal in a restaurant is a commercial exchange like any other, where what you pay for should be what you asked for - whether you are allergic or not. If that can only be exactly what is on the menu, then the menu should stipulate no substitutions. All the rest is only people judging other people for no good reason.

  • I don't see why people should have to explain that the illness is real. Even if a person who isn't gluten sensitive or have celiac asks for guten free and the chef says it is gluten free but serves gluten, that is a scam. All of you who think that this ass is doing something good because some customers are rude, don't you expect to get what you order? What if your beef stew is made from rat meat? If the chef prefers to serve you rat but say he serves beef, then you mean that he is doing something good, since you don't taste the difference? Obviously you are not allergic to rat so you must be ridiculous and fussy if you expect that the beef is actually beef. It is amazing how many people have such low morals and think that it is ok to scam people when you sell something.

    I love how so many people want to make this about "asshole customers". There always seems to be a disturbing amount of people who are just sick of pussy, whiney people. Well good for you, you're all so much better than the rest of the world. It's like a new kind of snobby-ness. You complain about all these people and then engage in the same hypocritical behavior.

    This is about a douchebag chef who is lying to his customers, and boasting about it. Who gives a fuck if the customer has an actual allergy?

    But yeah, hey, good for him, he's standing up for your guys' right to complain about shit you don't like or understand, because you're so much better than all of those other asshole diners.

    There is no reason a restaurant can't refuse substitutions. It's their work and their establishment, and they can control certain elements like what food they serve and how. If they want more business they should accommodate different needs. If a need cannot be accommodated, the patron should seek service elsewhere.

    However, Cardone is an asshole. Be upfront and honest that you won't substitute.

    This is great news! Apparently, the economy has improved so much that places of business can reject customers who are not disruptive or harming the business, or even strive to make them physically ill. No longer does a restaurant need to be interested in diners coming back!

    He also had a FB post about Valentine's Day weekend and how he was dreading working it. One of his "friends" recommended he "pee in the soup". Lovely. Nice that he has friends that are as high quality human beings as him. GF people were not the only ones that he gave poor service to, I'm sure!

  • My daughters are gluten intolerant and though their symptoms would not be immediate they would become ill if someone spiked their meal with gluten. I am a nurse and would not dream of giving someone something that they have reported that they are allergic to. To do so accidentally would be negligent. To do so intentionally would be gross malpractice. Personally I think this arrogant jerk should be fired and never allowed to work in the food service industry again. His attitude could not only make someone sick, he could cause someone to die from anaphylaxis should he chose to ignore a diner's allergy requests. If I were a restaurant owner I would consider him not worth the risk as an employee. He shows an indifference to the health and welfare of others that could not only adversely affect business, but could possibly result in legal liability.

    Gluten intolerance is quite serious, but it really isn't a true "allergy", there is no IgE (antigen/antibody) reaction or risk of anaphylactic shock, it's an intolerance. There is, however, a bona-fide allergy to wheat and gluten is the protein portion of wheat which is where allergens tend to be found - in the protein.

    as someone else noted, self-diagnosis is rampant and sadly, there are some people who do use "allergies" or special food needs as an excuse to get custom-made food orders when eating out -- years ago when the airlines served meals (even on short flight for free!), it was known among frequent travelers to request special dietary needs meant getting better quality

    As more genuine sensitivities and intolerances are discovered as valid, there will be more who abuse it as well, unfortunately for those who really do need the elimination, this muddies the waters and can lead to skepticism

    I'm a celiac and it is very real. It is not some made-up tree-hugging bs. What the chef doesn't realize is that the results are not immediate. It may be 2 to 3 days for the adverse effects to happen. But they happen!! Celiac disease is not like a peanut allergy. It's a matter of education and awareness. And he obviously doesn't know anything about celiac disease.

    I'm sure you know that celiac disease is not a type I hypersensitivity which is what many "gluten-free" people think they have. Bottom line is that most "gluten-free" people - are not.
