Bark Hot Dogs to Open at Rumored Shake Shack Spot
The future home of Bark Hot Dogs
Chef/owner Josh Sharkey is a Café Grey vet; a blurb about the soon-to-open restaurant on its Facebook page clearly states aims of upending the mass-produced, genetically modified, and factory farmed conventions typically associated with generic, supermarket caliber hot dogs. The restaurant will give some sort of nod to "environmental initiatives" on the front-of-house side of things, and in a bid for food production transparency will detail ingredient sources on its website.
Other early details: the hot dogs are a beef and pork mix, and chef Brandon Gillis, formerly of Franny’s, will join Sharkey in the kitchen. The restaurant will also serve locally produced beer and soda. Bark is projected to open in June; a call for chefs with serious charcuterie and pickling skills, plus a slow food ethos, went out over Craigslist just two weeks ago.
