Anyone can reverse engineer the formula. FDA/USDA regulate what you can put in human food (GRAS), and the quality of what you put in it. If its not listed, you can't use it. Now just test for each ingredient until you have the formula. Be sure to do double blind tests. KFC doesn't really need to care about the formula, since if anyone advertises their chicken tastes like KFC, lawsuit time. The most secret that can exist would be in the cooking/assembly process of the chicken in the factory, such as layering ingredients or marinating, etc. Timings would be most secert. Employees will rat to you what the machines are, but the detailed operating specs and configurations of them are a secret.

You can get some pretty intricate spice mixtures from family to family. My grandmother's family uses eight spices in varying amounts. While the spices are important, what is of the upmost importance is to mix part of your spice mixture into the buttermilk which you marinate your chicken in overnight so that flavors get drawn in. If you do that, man, that's good eatin'.
