Bun: Chef Michael Bao Huynh and his wife, Thao Nguyen, who has amazing noodle preparation expertise, have opened this Vietnamese rice-noodle and small-plate spot in SoHo. Although he has gotten some financial backing from Warren Cuccurullo, formerly of Missing Persons and Duran Duran, Huynh designed the designed the 45-seat space himself. Cantina: Chef Jason Neroni, most recently of Porchetta, has re-surfaced as a consultant for this Pan-Latin newcomer. Another small-plate venture, this 45-seater designed by Jason Volenec evokes a visit to Cuba. Cantina's plan includes serving super late-night (possibly to 6 a.m.) and also offering delivery and takeout. Menu offerings include a lamb tongue sandwich with membrillo and almond butter, braised oxtail with cocoa and pulled-pork dulce de leche, along with fresh-fruit sangrias and Cuban sodas. 29 Avenue B near 3rd Street, 212-228-0599.
Athens Tavern: With a consulting chef straight from Athens, this is no ordinary Greek joint. Serving contemporary rather than classic cuisine, this "gastro-tavern" is the brainchild of Antonia Panelli, who worked for many years at Avra, and her partner Nicos Gregoriou. Chef Yianni Baxevanis of Athens restaurant Hydra will be showing off all that's new in Greek cuisine, including highlighting three new Greek cheeses previously unavailable: Mizefra, Gravgera, and Alfohoturo (flower cheese, to be used in several of Athens Tavern's desserts including pie). 23-01 31st St at 23rd Ave, Astoria, Queens. 718-267-0800.
