Marian Burros has an article in the Times this week about the resurgence of buffalo as an alternative red meat. She calls it “steak without guilt,” as the meat is healthier than beef: loaded with iron, with less total fat, fewer calories and more of the good kinds of fatty acids. It’s also praised by chefs, environmentalists, and nutritionists, a rare concurrence.
As with beef, it’s important be aware of what the animals are fed. Some buffalo eat nothing but grass; others spend their final months on grains, which is the way much cattle in this country is finished. It also makes the meat slightly higher in fat and calories.

Not a fan of Bison. If I eat meat I like a lot of marbling so it sizzles on the grill. Bison is very lean and has a texture that reminds me of liver.
I've had it in burger form and liked the taste. Buffalo is still quite a bit more expensive than beef, which AIUI is largely due to the fact that there are only one or two slaughter houses capable of handling buffalo. If more are opened the cost should come down.
We buy bison from Elk Trails at the Union Square Greenmarket pretty regularly, and we love it. The fact that it is so lean means you need to adjust your cooking time/method (i.e. grilling or pan-roasting over low, indirect heat - searing it over high heat dries it out), but once you've gotten the hang of that, it's really just as good as beef, texture-wise. We've bought ground bison for excellent burgers, as well as tenderloin, delmonico/ribeye and strip steaks. As we move into fall and winter, we'll probably try some of the stewing cuts as well.
They serve excellent buffalo burgers at the Ear Inn on Spring street. Try one and wash it down with a pint of Guiness. YUM!
