Bourdain didn't say "That bitch" about Ray as the other article says -- he said "Tip, bitch!" in reference to her stingy ways on $40 A Day.

I have long been a Mario Batali fan but after this panel I think he's a pompous arse. He is way too impressed with himself, but not willing to answer any real questions. Case in point: one of the audience questions was about the racial makeup of restaurants -- why there are so few African Americans in kitchens, and why front of house staff are almost always white. Anthony Bourdain went to great lengths to give a thoughtful considered answer, and after he finished, Mario just looked to the next question-asker. This was very disappointing for someone with the hiring power Batali has.

Bourdain was the star.

Has some excellent quotes and zingers that should have made this post.

"allowing great Chefs to force their menu item selection agenda (spleen, brains, etc.) onto diners and change the American dining palate forever" -that sounds about right
