Not to put too fine a point on it (it's already got one), nor to seem indelicate, but, the pork fat looks like ... something else.

Let's see: if I get fresh ramps, EVOO & garlic and my favorite organic pasta for, say, $5...why should I visit Del Posto to get the same thing for around $25? It seems that the expensive restaurant thing is just too out of hand. If I may be so bold, these are the same reasons that closed Le Cirque 2000 and Le Cote Basque (among others). And that's a shame.
