Interesting analysis of the history of kimbap but you are wrong on two points.
1. Japan and Korea did not develop it side by side. Japan was influenced by Korea in many ways including food.
2. Regarding the term "Spartan Food", if you watch any TLC show on sushi you would know that Japanese Sushi was developed out of convience. Because it was handy and easy to eat it was considered to be fast food back then.
I recommend you read a book on the origins of Japanese culture, you will quickly learn that Japan owes alot of their development to China and Korea.
There's a cheap Korean take out place called Kofoo that carries a lot of kim bob. It's nowhere near me so I wouldn't go out of my way for it, but I tried it a few times in the summer and would recommend it. I love Japanese sushi but I really wish there were more places selling kim bob.
