It's true. Sushi is always flash frozen. It's not the same as just putting it in a normal freezer, of course, which would ruin the "freshness" quality. But it certainly doesn't matter if it's Monday or Friday -- the sushi is the same.

I feel like you know when you are eating bad fish. I've had bad fish on every day of the week. But in terms of sushi it is pretty scary that you can be eating old fish. My friend used to buy tuna at the supermarket and make sushi with it. I told him that was so dangerous but he never listened. Gotta get the sushi grade stuff.

I've heard this from a few people before, but honestly i dont see a problem with it, because you can taste when the fish is fresh or not. If its a good restaurant its always up to par in my experience. mmmm, sushi.

i remember reading a story about sushi in the ny times (maybe last year). apparently *all* sushi, with the exception of tuna (doesn't cary parasites or something) must be super-frozen, per USDA regulations. i think morrimoto was even quoted as saying something like we freeze but don't talk much about it.

as for fresh fish, true, the fulton st market is closed fri and sat nites so sat/sun might be not as great as other days.
