In the Market: Sea Beans

seabeansresize.jpgGothamist has only recently been exposed to the sea bean. What? The haricots verts of the sea? Not really. But they do have a taste of sea salt, which you need to consider while cooking.

They are perfect for a light, room temperature salad. To cook them, just blanch and toss with whatever ingredients you'd make a string bean salad with. Here's one.

Sea beans sell for about $3 for about 3 handfuls (enough for two people as a salad or side).

Any other sea beans recipes we should know about? Why do you never see them in NYC restaurants?

These Sea beans are making me thirsty

You do see them in NYC restaurants! Lupa serves them warm as a side dish (I think with roasted red pepper).

I've only had these once, at Maia, and LOVED them! Salty and refreshing. Joe, could you clarify what market you saw them in?

I had 'em once at the James Beard house, brought in from the Left Bank the night before by the very mellow (but uncannily professional) cooks from Top of the Cove in La Jolla, CA.


Served as a bed beneath fish (black cod, perhaps?). Delightful. Go figure.

sorry, these are currently in fairway and i saw them in garden of eden 14st location last week.

Whole Foods often carries them too. They're very salty.

Chuck them into a fry pan, get some soy sauce the lighter the better don't go for the black bean sauces.

I'm thinking Maggi sauce here :)

A really small amount of olive oil, chuck in quite a bit of sugar so the sauce is quite sweet, and then reduce the Maggi sauce.

Should take maximum of about 3-4 minutes throw some thinly chopped garlic towards the end so it cooks in the sauce.

Serve as one dish of many with rice.
