In the Market: Fontina Val d'Aosta

picture 096 (2)revise.jpgThere was a time when Gothamist thought all fontina cheeses were created equal. We've noticed that's far from the truth. While fontinas are noted to be creamy and an excellent melting cheese, the traditional mother of all fontinas from Val d'Aosta in northern Italy has very little in common with the standard supermarket fontina. This cow's milk cheese is nutty and pungent, yet creamy and perfect for melting as well.

You can currently pick up a Fontina Val d'Aosta at Fairway for $9.99/lb, or Artisinal for $9.50/.5lb(!)
