In the Market: Black Trumpet Mushrooms

finalblacktrumpet.jpgAs Gothamist passed a basket full of fresh black trumpet mushrooms at the market this week, we could almost smell their intoxicating, truffle-like aromas gently sauteing in a pan of just melted butter.

Black trumpets are excellent as a foil for any creamy starch, including pasta, couscous or polenta. They are also frequently available at gourmet shops in a dried form. Gothamist likes them ground and added as a coating to meats like lamb.

You can find fresh or dried black trumpets at Garden of Eden (7 E. 14th St & 5th Ave). The fresh are running about $12 per 1/4 lb, which should be enough for two people.

i made a risotto with hen of the woods, cremini and oyster mushrooms a couple of weeks ago, and indeed, may is morel month.
