The best skate I've had in the city was at Oceana, 55 E. 54th St. -
Maine Skate Stuffed with Pastrami, Green Cabbage, Toasted Walnuts and Mountain Huckleberries. It may sound odd but it satisfies every taste bud you have.

It even blew away the Poached Skate Wing with Marinated Green Papaya; Lobster-Cardamom and Harissa Emulsion, at Le Bernadin and the the Sauteed Skate with pommes fondant and lemon caper butter at Branzini.

I didn't try the Skate at Stone Barns, I was too intrigued by the stuff from the farm.

Correction: Blue Hill Stone Barns is not "upstate." Its one hour from NYC, in the suburbs -- Pocantico Hills, to be exact, a lovely suburb populated by the massive Rockefeller Estate (on which BHSB is located) and loads of people with regular-sized wallets.

"Upstate" is Albany, Buffalo, Syracuse, Rochester, etc. -- all of which are at least 3 hours (10 for Buffalo) from NYC by car. Don't sell BHSB short because you've never gone north of 96th St!
