The most common way to use arequipe in Colombia is to slather it between obleas. The obleas are a wheat flour wafer, very thin and crispy. They are commonly sold this way on the street, or through cafes. There is even a restaurant chain, a sort of coffee shop called Obleas Jose A.

There are also various pastries that have arequipe inside, very good with a nice cup of tinto.

my best friends growing up were brazilian and columbian/uruguayan, so i was fortunate enough to be introduced to dulce de leche at an early age. if you find yourself in a good south american grocery store, i recommend you seek out Alfajores (the j is pronounced like an h). like the above poster alluded to, this is a cookie sandwich with dulce de leche in the middle that has been dipped in chocolate. some words of warning, we used to fight and pull each others hair out over these, dont think it wont happen to you.

Like most great things dulce de leche is from Argentina and the best way to eat dulce de leche (besides straight from the tub with a spoon) is nestled between two cookies and dipped in chocolate, in other words, as an alfajor. The best, hands down, are from Havanna.
